Instructions

Step 1: Prepare the Potatoes

  1. Peel the potatoes (optional) and using a mandolin, slice the potatoes approximately 1/8 of an inch thick. If not peeling, scrub the outside skin very well.
  2. Rinse the potato slices in cold water several times until all of the starch has been rinsed away, and the water runs clear.

Step 2: Soak the Potatoes

  1. In a bowl, soak the potato slices in cold water and 1/2 cup of white vinegar. Ensure the water completely covers the potatoes.
  2. Let the potatoes soak for at least 30 minutes.

Step 3: Dry and Season the Potatoes

  1. Remove the potatoes from the water and dry them thoroughly on a paper towel. Ensure they are fully dry before frying.
  2. In a small bowl, mix together the dried rosemary, minced garlic, and salt to create the rosemary garlic seasoning.
  3. Heat 1 inch of neutral frying oil in a frying pan.
  4. When the oil is hot, carefully place the dry potato slices in the oil, ensuring not to overcrowd the pan. Fry in batches if necessary.
  5. Keep the oil temperature low to prevent splattering, but maintain a steady sizzle.
  6. Fry the potatoes until they stop sizzling and float in the oil, usually taking about 10-12 minutes per batch.
  7. Remove the fried potato chips from the oil and drain on paper towels.
  8. While still hot, sprinkle the potato chips with the rosemary garlic seasoning or salt to taste.

Step 4: Serve and Enjoy

  1. Serve the crispy potato chips immediately as a delicious snack or side dish.
  2. Enjoy the crunchy texture and flavorful seasoning of these homemade potato chips!
