    • 2 lbs large white mushrooms
    • ½ cup panko breadcrumbs

Instructions

Chicken Preparation:

  1. Preheat oven to 375 degrees
  2. Season Just Bare® Boneless Skinless Chicken Breasts with salt and pepper
  3. Bake chicken in oven for 15-18 minutes, or until internal temperature of chicken reads 165 degrees
  4. Remove from oven, let rest until room temperature
  5. Cut into 1 inch pieces and place in a bowl

Other Preparation:

  1. Preheat oven to 400 degrees
  2. Remove stems from mushrooms and clean any debris/dirt
  3. In a food processor, add cut chicken and boursin cheese
  4. Pulse the processor until chicken and boursin cheese are mostly combined
  5. Add salt, pepper and 2 tbsp chopped thyme
  6. Pulse until just combined
  7. Remove chicken mixture from food processor and place in bowl
  8. Using a spoon, fill firmly fill mushroom caps with chicken mixture
  9. Dip chicken side of stuffed mushrooms into panko crumbs, place on sheet pan
  10. Bake in preheated oven for 12-15 minutes, or until panko crumbs are golden brown
  11. Garnish with remaining chopped thyme, place on a service tray and enjoy
