Ingredients

    • 2 each sweet potatoes, cut into 1 ½ inch cubes
    • 1 ½ lbs brussel sprouts, blanched
    • 1 large red onion, cut into 1 ½ inch chunks and separated
    • 1 tsp black pepper
    • 1 tbsp kosher salt
    • 1 cup dried cranberries
    • 1 cup cranberry juice
    • 1 tbsp dijon mustard
    • 1 tbsp honey
    • ½ tsp chile flakes
    • ¼ tsp black pepper
    • ½ tsp kosher salt
    • 1 tbsp fresh thyme, chopped

Instructions

Chicken Preparation:

  1. Preheat oven to 425 degrees
  2. Cut Just Bare® Chicken Breast Tenders into 1 ½ inch chunks
  3. On pre-soaked 8 inch bamboo skewers, alternate chicken chunks with sweet potato, brussel sprouts and onion
  4. Season with salt and pepper, roast in oven for 10-12 minutes, or until chicken temperature reaches 165 degrees
  5. Baste with cranberry glaze and broil on high for 2 minutes

Other Preparation:

  1. Place potatoes in a medium pot with enough water to cover
  2. Bring to a boil over medium high heat and cook cut potatoes for 5 minutes
  3. Drain potatoes and let cool to room temp
  4. In a small saucepan, heat cranberries, cranberry juice, honey, dijon mustard, chile flakes, salt, pepper and fresh thyme over medium heat.  
  5. Once the cranberry mixture is simmering, let reduce by half and then remove from heat.  
  6. Once cooled, use brush to apply to chicken skewers
