Ingredients

  • 9 Just Bare Boneless Skinless Chicken Thighs
  • 1 cup BBQ Sauce
  • 1/2 brick of Guava Paste
  • 4 tablespoons Mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup Hot Sauce (adjust to taste)
  • 1 7oz bottle (about 6 ounces) Malta Soda
  • Salt and Pepper to season raw chicken

Instructions

Step 1: Prepare the Sauce

  1. In a mixing bowl, combine BBQ sauce, guava paste, mustard, Worcestershire sauce, hot sauce, and Malta soda. Mix well until all ingredients are thoroughly combined.

Step 2: Prepare the Chicken

  1. Rinse the Just Bare Boneless Skinless Chicken Thighs under cold water and pat them dry with paper towels. Season with Salt and Pepper.
  2. Spray a small amount of cooking spray into the bottom of the slow cooker.  Place the chicken thighs evenly in the bottom of the slow cooker.

Step 3: Add the Sauce and Cook

  1. Pour the prepared sauce over the chicken thighs, ensuring they are evenly coated.
  2. Cover the slow cooker with the lid and cook on low for 5 hours or until the internal temperature of the chicken thighs reaches 165°F (75°C) when tested with a meat thermometer.

Step 4: Serve

  1. Once the chicken is cooked through, remove it from the slow cooker and transfer it to a serving platter.
  2. Spoon any remaining sauce from the slow cooker over the chicken.
  3. Serve the slow cooker BBQ chicken hot with your favorite side dishes, such as rice, coleslaw, or roasted vegetables.

Tips

For added depth of flavor, you can marinate the chicken thighs in the sauce for a few hours or overnight in the refrigerator before cooking.

For a thicker sauce, if you prefer a thicker sauce, you can remove the chicken thighs from the slow cooker once they’re cooked and simmer the sauce on the stove until it reduces to your desired consistency.

For a spicier BBQ, you can make the dish milder or spicier by increasing or decreasing the amount of hot sauce used. In addition, you can add 2 dried poblano chili peppers into your slow cooker.  Be sure to remove the peppers or use a stick blender to combine any remaining whole pieces of the peppers before serving.
