  • Chicken Ingredients
  • Cauliflower Rice
    • 1 ½ lbs frozen riced cauliflower
    • 3 Tbsp oil
    • 2 large eggs, whisked
    • ½ cup red bell pepper, small dice
    • ½ cup onion, small dice
    • 1 tbsp minced garlic
    • ¼ cup soy sauce
    • 1 tbsp rice vinegar
    • 2 tsp sesame oil
    • 1 tsp kosher
    • ¼ cup green onions chopped
  • Bang Bang Sauce
    • ½ cup mayonnaise
    • 2 tbsp sweet Thai chili sauce
    • 2 tbsp Sriracha sauce
    • 1 tsp rice vinegar

Chicken Preparation:

  1. Preheat Air Fryer to 360 degrees
  2. Cook Just Bare® Lightly Breaded Chicken Breasts for 19 minutes or until crispy and hot
  3. Slice chicken breasts and hold hot

Other Preparation:

  1. Preheat a large non-stick skillet over medium heat.  Add one tablespoon of oil along with the whisked eggs. Cook over medium heat for 2 minutes, stirring occasionally, until scrambled. Remove the eggs from the pan and wipe it clean with a paper towel.
  2. Add another tablespoon of oil along with the diced onion and peppers. Sauté for 3-4 minutes, or until tender. Mix in the minced garlic and continue sauteing for an additional 30 seconds.
  3. Add the cauliflower rice, soy sauce, vinegar, sesame oil, and salt. Cook over medium-high heat for 6-8 minutes, stirring occasionally.
  4. Mix in the scallions and scrambled eggs during the last 2 minutes of cooking.
  5. Place cauliflower rice in the middle of plate, top with sliced crispy chicken breasts and drizzle with Bang Bang Sauce
