  • 1 Just Bare Whole Young Chicken
  • 1/4 cup olive oil
  • 2 tsp dried oregano
  • 2 tsp red pepper flakes
  • 1 tsp paprika
  • 1 bulb of garlic, minced
  • 2 sprigs of fresh rosemary, chopped
  • 1 tsp black pepper
  • 2 tsp dried thyme

  2. Spatchcock the chicken to lay it flat.

Create the Spice Rub:
