  • 1 3-4 lb Just Bare Pork Loin, cut into 2” randomly shaped chunks
  • 1.5 liters vegetable oil (for frying)
  • 2 cups whole milk
  • 3 tbsp smoked paprika, divided
  • 2 tbsp cumin, ground, divided
  • 2 tbsp chipotle powder
  • 2 tsp kosher salt
  • 2 tsp freshly ground black pepper
  • 4 cups all-purpose flour
  • 8 Belgian waffles
  • 8 tbsp butter
  • 1 cup maple syrup

  1. Add oil to fryer or deep cast iron skillet leaving oil at least 1.5” from the top to ensure it does not spill over. Heat to 375°F.
  2. In a large bowl, combine milk with 1 tablespoon paprika and 1 tablespoon cumin. Place the pork chunks into the seasoned milk and let sit for 10 minutes.
  3. In another large bowl, combine flour, 2 tablespoons paprika, 1 tablespoon cumin, chipotle powder, salt, and pepper. Dredge pork chunks in seasoned flour mix, shake off excess flour, and place on a plate or baking pan until ready to fry.
  4. Working in batches, add 3 to 4 pieces of pork to the oil and fry for 4 to 5 minutes or until golden brown and cooked to an internal temperature of 145°F.
  5. Heat waffles as directed. Top warm waffles with butter, 2 pieces of fried pork, maple syrup, and a pinch of smoked paprika.
