    • ¼ cup yellow onion, diced
    • 2 cloves garlic, thinly sliced
    • 1 lb broccoli rabe cut into 2-inch pieces
    • ½ tsp red pepper flakes
    • ½ lb sharp provolone, sliced
    • ½ cup mayonnaise
    • ¼ cup sun dried tomato pesto
    • 4 each favorite hoagie/sub roll (8 inch or so)
    • 1 tsp kosher salt
    • Freshly ground black pepper

Instructions

Chicken Preparation:

  1. Recommended Just Bare® Lightly Breaded Chicken Breast preparation for this recipe:
  2. Preheat Air Fryer to 360 degrees
  3. Cook Just Bare® Lightly Breaded Chicken Breasts for 17 minutes or until crispy and hot

Sandwich Preparation:

  1. Preheat Oven to 400 degrees
  2. Heat olive oil in a medium skillet over medium heat. When it starts to shimmer, add the red pepper flakes and cook, stirring, for a minute or two.
  3. Add the broccoli rabe and sauté for 2 minutes.
  4. Add garlic and onion, continue to cook for 3 to 4 more minutes
  5. Season with salt and pepper
  6. Remove from heat and hold for sandwich building
  7. In a small bowl, stir together the sun-dried tomato pesto and mayonnaise.
  8. Slice open the rolls, spread both sides with sun-dried tomato mayo
  9. Layer with the broccoli rabe, Just Bare® Lightly Breaded Chicken Breasts and provolone
  10. Heat sandwiches in oven for 4-5 minutes, or until bread is toasted
