  • 1 rack Just Bare St. Louis Style Sparerib
  • 2 teaspoons Salt
  • ½ teaspoon Black pepper, freshly ground
  • 2 tablespoons Chipotle chili in adobo, canned, plus 2 tablespoons of the adobo sauce
  • 2 tablespoons Lime juice
  • 2 tablespoons Brown sugar, packed
  • 2 tablespoons Extra virgin olive oil
  • Cilantro, chopped, optional

  1. Preheat oven to 300°F. Sprinkle ribs with 1 ½ teaspoons salt and ½ teaspoon pepper. Brush 2 tablespoons of the canned adobo sauce over the ribs and place on a baking sheet, cover with foil. Ribs can be cut in half crosswise if pan is not large enough. Bake until meat is fork-tender, about 2 hours.
  2. When ribs are finished baking, preheat a grill or broiler to high. Combine the remaining ½ teaspoon salt, chipotle chili, lime, brown sugar, and olive oil and brush ribs liberally with the sauce. Grill or broil ribs, turning occasionally until nicely browned, about 4-6 minutes. Sprinkle with cilantro and serve.
