Chipotle Lime Chicken with Guacamole and Mango Slaw

The tropical flavors from the mango slaw pair perfectly with this grilled chipotle lime chicken and chunky guacamole.

  • Chipotle Lime Chicken
  • Mango and Red Cabbage Slaw
    • 2 mangos, peeled and thinly sliced
    • ½ small red cabbage, shredded, or 1 bag of coleslaw mix
    • 1 poblano pepper, cored and thinly sliced
    • ½ cup cilantro, minced
    • 1 lime, juiced
    • 1 tbsp honey
    • 1 tbsp olive oil
    • Kosher salt
    • Freshly cracked black pepper
  • Guacamole Topping
    • 2 ripe avocados, cored and diced
    • ½ pint of cherry tomatoes, halved
    • ¼ cup cilantro, chopped
    • ¼ red onion, minced
    • 2 garlic cloves, minced
    • ½ lime, juiced
    • Kosher salt
    • Freshly cracked black pepper

  1. Prepare chicken by combining ingredients and allowing it to marinate for at least 30 minutes.
  2. While the chicken is marinating, combine sliced mango, shredded cabbage, sliced poblano, and minced cilantro in a bowl.
  3. Dress mango slaw with the juice of one lime, honey, and olive oil – season to taste with salt and black pepper. Allow flavors to marry in the fridge for at least 15 minutes.
  4. Prepare the guacamole by adding diced avocado, cherry tomatoes, red onion, and garlic in a small bowl. Add the juice of half a lime and season to taste with salt and black pepper – reserve. If desired, smash avocado to create a smoother texture.
  5. Preheat a grill pan on medium-high heat.
  6. Cook chicken breasts on both sides for 7-9 minutes, the chicken should reach a minimum internal temperature of 165°F. Remove and allow to rest, slice on a bias if desired.
  7. To serve, plate 1 grilled chicken breast followed by a side of mango slaw. Top chicken with guacamole and enjoy!
