

Little Italy Breaded Chicken Breast Grinder

Ingredients

- Grinder/Sandwich Ingredients:
- 2 tbsp Olive Oil
- ¼ cup yellow onion, diced
- 2 cloves garlic, thinly sliced
- 1 lb broccoli rabe cut into 2-inch pieces
- ½ tsp red pepper flakes
- ½ lb sharp provolone, sliced
- ½ cup mayonnaise
- ¼ cup sun dried tomato pesto
- 4 each favorite hoagie/sub roll (8 inch or so)
- 1 tsp kosher salt
- Freshly ground black pepper
Instructions
Chicken Preparation:
- Recommended Just Bare® Lightly Breaded Chicken Breast preparation for this recipe:
- Preheat Air Fryer to 360 degrees
- Cook Just Bare® Lightly Breaded Chicken Breasts for 17 minutes or until crispy and hot
Sandwich Preparation:
- Preheat Oven to 400 degrees
- Heat olive oil in a medium skillet over medium heat. When it starts to shimmer, add the red pepper flakes and cook, stirring, for a minute or two.
- Add the broccoli rabe and sauté for 2 minutes.
- Add garlic and onion, continue to cook for 3 to 4 more minutes
- Season with salt and pepper
- Remove from heat and hold for sandwich building
- In a small bowl, stir together the sun-dried tomato pesto and mayonnaise.
- Slice open the rolls, spread both sides with sun-dried tomato mayo
- Layer with the broccoli rabe, Just Bare® Lightly Breaded Chicken Breasts and provolone
- Heat sandwiches in oven for 4-5 minutes, or until bread is toasted
